Pasatelli
Bowl of Pasatelli Soup

4 cups fine bread crumbs
4 tablespoons flour
1 tablespoon pepper
1 dash nutmeg
1 dash cinnamon
Pinch of lemon rind (optional)
1 1/2 cups grated Parmesan cheese
6 eggs (mix in one at a time)

Mix all ingredients until it forms a moist ball. If too moist add a small amount of bread crumbs. Put the mixture through a meat grinder to form short “worms”. Lay the pasatelli on a cutting board and allow to dry before storing. They can be frozen for later use.

To cook pasatelli make a clear chicken broth, bring to a boil, place pasatelli in the chicken broth then lower the heat to medium, boil slow for about 15-20 minutes and then serve.

  1. Our Christmas Eve dinner is cappelletti and pasatelli. Everyone looks forward to it! We make the pasatelli ahead of time, form it into balls and wrap it in plastic wrap, put it in a big baggie and freeze it. When we want to use it, we put it in the fridge to thaw a bit and then we use a box grater and grate it right into the pot of chicken broth. I tried the meat grinder and it didn’t work for me.

      What a great idea for making the pasatelli quickly. I am going to try it next time I make them. I wonder if the food grater wheel of my Cuisinart Food Processor would make quick work of it too. I’ll have to try that.
