  1. Just used the cappelletti maker yesterday. It did make our job much easier. But, my only wish would be to make it just a little bigger. The finished product is much smaller than what we are used to. I guess our Italian grandmother didn’t do like other folks and make the “little hats”, we always crimped the edges with a fork and our family is used to a little bigger finished version.

      Glad the cappelletti cutter helped make your job easier. Regarding the size, there are a few reasons they are the size that they are…The original cutter that I show on the Old World Italy site was the same size so we stayed with tradition a bit. Another reason for the size is that uncooked they are 1 inch in diameter but once cooked they swell a bit more and then fit perfectly on a spoon (when in soup) or a fork (when in sauce) to make a bite size nugget of joy. But the main reason for the size is the 1″ stainless stock that we make the heads from helps us keep the cutters affordable as stainless steel is quite costly. Now…with all of that said, we are actually looking at producing some with a larger diameter head and are in the process of weighing out the cost to size. Your input is appreciated. What size would be ideal for you?
